Cheesemaker or Lead Cheesemaker
Type: Full Time
Reports to: Lead Cheesemaker or Company President
Primary Duties:

Cheese Production through each step of the process, from flowing milk to Pressing
-
Participation in routine cleaning, sanitation, record keeping and Food Safety
-
Managing assistant cheesemakers, and making sure that food safety and cheese quality needs are met

Ensuring that washing, turning, caring for aging cheese is being done correctly
-
When needed, helping in our packing room, to cut wrap and package cheese for wholesale.

Working with the Head Cheesemaker directly on Production schedule, ongoing product development, process improvements and co- managing.

Responsible for reporting production deficiencies, food safety issues and quality issues
Qualifications and Requirements:

Cheesemaking or milk and cheese chemistry experience is preferred but not required

Understanding of Good Manufacturing Practices, cleaning, sanitizing, or Food Safety is preferred

Significant physical strength and endurance, including the ability to lift 50+ lbs comfortably. Includes long days, on your feet, in both hot and cold environments. ( make room and coolers)

Team player who wants to work hard, collaborate and make amazing cheese. Interest in continued education and food safety is a plus.

Open minded, and able to work well with others, including guiding or correcting team members.

Lead Fulfillment
Type: Part time or Full Time
Reports to: Company President
Primary Duties:
- Cheese cutting and packaging through each step of the process including set up and operation of cheese cutting and packaging equipment and supervising a team to accomplish production goals while maintaining safe and sanitary conditions
- Participation in routine cleaning, record keeping and Food Safety
- Working with the cheesemaking team directly on production schedule, ongoing product development and process improvements
- Responsible for reporting cutting and packaging deficiencies, food safety issues and quality issues
- Responsible for tracking and maintaining inventories related to cutting and packaging
Qualifications and Requirements:
- Understanding of Good Manufacturing Practices, cleaning, sanitizing or Food Safety is preferred
- Significant physical strength and endurance, including the ability to lift 30+ lbs comfortably. Can include long days on your feet, in both hot and cold environments (make room and coolers).
- Team player who wants to work hard, collaborate and work with amazing cheese.
- Interest in continued education and food safety is a plus.

Assistant Cheesemaker
Type: Part Time or Full Time
Reports to: Lead Cheesemaker
Primary Duties
- Assist with the cheesemaking process, which includes draining, stirring, salting, and hooping curds.
- Assist with post-make clean up, including washing equipment, tools, moulds, tables, tubs, and pipes.
- Keeps food safety a top priority.
- Assist with affinage work, including flipping, brushing, washing and record keeping.
- Assist with packaging and shipping during peak periods. Packaging consists of bagging, wrapping, sealing, and boxing cheese as well as shipping out insulated packages to retail and wholesale customers.
- Ensure safety standards are being met and recorded.
- Taste cheese
- Assist with the continuation of improving the company’s Standard Operating Procedures.
Physical Demands
Must be able to lift up to 45 lbs safely.
Must be able to handle a moldy environment with the use of PPE.
Qualifications and Requirements:
- Detail oriented.

- Degree in Dairy Manufacturing, Dairy Science, Food Science or related field.

CHEESE CUTTING AND PACKAGING
JOB DESCRIPTION:
Redhead Creamery is seeking a dedicated and detail-oriented Cheese Cutter to join our team. This position is crucial in ensuring the efficient cutting, packaging, and delivery of our high-quality cheese products. The ideal candidate will have a strong attention to detail, the ability to work in a fast-paced environment, and a passion for excellence in dairy production.

RESPONSIBILITIES + QUALITIES
- Print and organize order estimates from customers for shipping, delivery, and pick-up.
- Cut and package cheese and cheese products in various shapes, sizes, and containers for order fulfillment and retail sale.
- Designate products to customers on delivery routes and accurately complete order estimate sheets.
- Seal various cheeses for long-term aging in a refrigerated environment.
- Identify and rectify packaging errors to maintain product quality.
- Collaborate closely with the shipping team to prioritize the order of cutting and packaging tasks.
- Detect off-flavors and visual defects in cheese products, communicating findings to the leadership team.
- Utilize mental math skills for accurate measurement and pricing while cutting cheese.
- Adhere to a strict cleaning regimen before, during, and after packaging, using various chemical cleaners responsibly.
- Operate a deli slicer to slice products while following all safety precautions.
- Prepare and freeze fresh cheese curds in accordance with established Redhead procedures.
- Dismantle equipment for routine maintenance and troubleshooting as necessary.
- Assist in loading the delivery van on route days.
- Maintain an inventory of materials used in cheese packaging.

Input cheese weights into a digitized inventory system.
